Spinach-Ricotta Calzone



This Spinach-Ricotta Calzone recipe calls for a golden brown pizza dough pocket filled with a tasty mixture of spinach, ricotta, and Italian cheeses. It's a tasty and filling meal that can be eaten for lunch or dinner.

Ingredients:

  • 1 package 10 ounces frozen chopped spinach, thawed and squeezed dry
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound pizza dough, homemade or store-bought
  • 1 tablespoon olive oil, for brushing
  • All-purpose flour, for dusting

Instructions:

Preheat your oven to 425F 220C

In a large mixing bowl, combine the spinach, ricotta, mozzarella, Parmesan, garlic powder, onion powder, oregano, basil, salt, and black pepper

Mix until well combined

Divide the pizza dough into 4 equal portions

On a lightly floured surface, roll out each portion into a circle, about 1/4 inch thick

Spread the spinach-ricotta mixture evenly on one half of each dough circle, leaving a small border around the edges

Fold the other half of the dough over the filling to form a half-moon shape

Press the edges firmly to seal, then crimp with a fork

Transfer the calzones to a baking sheet lined with parchment paper

Brush the tops of the calzones with olive oil

Using a sharp knife, make a few small slits on the top of each calzone to allow steam to escape

Bake in the preheated oven for 15-20 minutes, or until the calzones are golden brown and crispy

Remove from the oven and let cool slightly before serving
