Vegan Banana Oat Pancakes



These vegan banana oat pancakes are a delicious and nutritious way to start your day. Made with simple ingredients like ripe bananas and rolled oats, they are wholesome and satisfying. Plus, they're easy to make and can be customized with your favorite toppings.

Ingredients:

  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1/2 cup plant-based milk
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • Pinch of salt
  • 1 tbsp maple syrup optional, for sweetness
  • 1 tbsp coconut oil for cooking

Instructions:

Put mashed bananas, rolled oats, plant-based milk, vanilla extract, baking powder, salt, and maple syrup if using in a bowl and mix them together

Mix the ingredients together well until a smooth batter forms

Warm up the coconut oil in a skillet that doesn't stick over medium fire

To make pancakes, pour a ladleful of batter onto the pan

Cook for two to three minutes, or until bubbles appear on top

Flip and cook for another two to three minutes, or until golden brown

If you need to, add more coconut oil to the pan and do it again with the rest of the batter

Top it with your favorite things, like fresh fruit, maple syrup, or nut butter, and serve it warm
