  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 teaspoon paprika
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chicken broth
  • 1/4 cup heavy cream or coconut cream
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions:

Warm up a big pan with olive oil over medium-low heat

To the skillet, add the minced garlic and diced onion

Cook for about two to three minutes, until the onion is soft

The chicken breasts should be browned on all sides after you add them to the pan

This should take about 5 to 6 minutes

After you add the sliced bell peppers, cook for another two to three minutes

On top of the chicken and vegetables, mix the smoked paprika, garlic powder, onion powder, salt, and black pepper

Mix it all together and coat it all over

Add the chicken broth to the pan and slowly bring it to a simmer

Let it cook on low heat for 5 to 7 minutes, or until the peppers are soft and the chicken is cooked through

Add the heavy cream or coconut cream and stir it in

Simmer for another two to three minutes

Take the pan off the heat and add chopped fresh parsley to the top before serving

If you want, you can serve the chicken paprika skillet hot with cauliflower rice or zucchini noodles
