Lemon Herb Chicken Spiedie Sandwich



These chicken spiedies are marinated in a zesty lemon and herb marinade, grilled to perfection, and served on toasted hoagie rolls with optional toppings for a delicious sandwich experience.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 4 hoagie rolls
  • Optional toppings: lettuce, tomato, red onion, mayonnaise

Instructions:

In a bowl, whisk together lemon juice, olive oil, minced garlic, chopped parsley, oregano, thyme, salt, and pepper

Place chicken breasts in a resealable plastic bag and pour the marinade over them

Seal the bag and refrigerate for at least 2 hours, or overnight for best flavor

Preheat grill to medium-high heat

Remove chicken from marinade and discard excess marinade

Grill chicken breasts for 6-8 minutes per side, or until cooked through and no longer pink in the center

While chicken is cooking, lightly toast hoagie rolls on the grill

Once chicken is cooked, remove from grill and let rest for a few minutes

Then, thinly slice the chicken breasts

To assemble sandwiches, place sliced chicken on toasted hoagie rolls

Add desired toppings such as lettuce, tomato, red onion, and mayonnaise

Serve immediately and enjoy!
