Raw Chocolate Pistachio Gelato
Enjoy the rich flavors of raw cacao and creamy avocado, with the crunch of pistachios to balance them out. This dairy-free gelato is a sweet treat that's great for any event.
Ingredients:
- 2 ripe avocados
- 1/2 cup raw cacao powder
- 1/2 cup maple syrup
- 1/4 cup almond milk
- 1/2 cup shelled pistachios
- Pinch of sea salt
Instructions:
In a food processor, blend avocados, raw cacao powder, maple syrup, almond milk, and sea salt until smooth
Fold in chopped pistachios
Transfer mixture to an ice cream maker and churn according to manufacturer's instructions until thick and creamy
Serve immediately for a soft-serve texture or transfer to a container and freeze for 2-3 hours for a firmer gelato
