Cottage Cheese Scrambled Eggs

Ingredients:

  • 4 large eggs
  • 1/2 cup cottage cheese
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Chopped chives or parsley for garnish optional

Instructions:

In a bowl, whisk the eggs until well beaten

Stir in the cottage cheese, salt, and pepper

Heat a non-stick skillet over medium-low heat and melt the butter
