Paleo Breakfast Casserole
Start your day the right way with this delicious and nutritious Paleo breakfast casserole. Packed with protein and vegetables, it's a perfect keto-friendly dish to fuel your morning.
Ingredients:
- 8 large eggs
- 1 pound ground turkey or chicken
- 1 cup diced bell peppers
- 1 cup diced onions
- 1 cup diced tomatoes
- 1 cup chopped spinach
- 1/2 cup almond milk
- 1/4 cup coconut flour
- 2 teaspoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon red pepper flakes optional
Instructions:
Set the oven temperature to 175C 350F
Heat the olive oil in a skillet over medium heat
Once added, cook the ground chicken or turkey until browned
When necessary, drain extra fat
Combine eggs, almond milk, coconut flour, onion and garlic powders, salt, paprika, black pepper, and red pepper flakes if using in a mixing bowl
After greasily coating the bottom of a casserole dish, distribute the cooked meat evenly
Arrange chopped spinach, tomatoes, onions, and bell peppers in layers over the meat
Cover the meat and vegetables with the egg mixture
Bake for 30 to 35 minutes, or until the casserole is set and has a light brown crust, in a preheated oven
Before slicing, let it cool for a few minutes
