Tacos Al Pastor



Tacos Al Pastor are a delicious and flavorful Mexican street food classic. This recipe features thinly sliced marinated pork, grilled to perfection with pineapple, and served on warm corn tortillas. The marinade, rich in spices and chilies, infuses the pork with a smoky, sweet, and slightly spicy flavor. Top your tacos with fresh cilantro and red onion, and don't forget a squeeze of lime for a burst of freshness. It's a delightful dish that's perfect for any occasion!

Ingredients:

  • 2 lbs pork shoulder, thinly sliced
  • 1 pineapple, peeled and sliced
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 3 dried guajillo chilies, soaked and seeded
  • 2 dried ancho chilies, soaked and seeded
  • 2 teaspoons ground cumin
  • 1 teaspoon ground oregano
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup white vinegar
  • Salt and pepper to taste
  • Corn tortillas
  • Fresh cilantro, chopped
  • Red onion, thinly sliced
  • Lime wedges
  • Salsa optional

Instructions:

Soak and seed the guajillo and ancho chilies

Then, put them in a blender with garlic, ground cumin, ground oregano, ground cloves, ground cinnamon, white vinegar, salt, and pepper

Mix until the paste is smooth

Put the pork shoulder slices in the chili paste mixture and let them sit for at least two hours or overnight in the fridge

Warm up the grill over medium-high heat

The pineapple and pork slices that have been marinated should be grilled for about two to three minutes on each side, or until they are cooked all the way through and have a nice char

Take the pork and pineapple off the grill and cut them up into small pieces that you can easily eat

For a short time on each side, warm the corn tortillas on the grill

Put some of the grilled pork and pineapple on a warm tortilla to make your tacos

Add chopped red onion and fresh cilantro on top

If you want, you can serve the tacos with lime wedges and salsa on the side
